WINEMAKING NOTE
La Xalamera is a wine from a single vineyard made only with Garnatxa vines (25-30 years old). A 15 hectare bucolic estate with small mini-plots separated by dry stone margins that is located on the east side of a plateau.
The harvest is done manually in small boxes of 18Kg. Once in the winery, the grapes are cooled overnight and the next morning they go through the sorting table to remove unwanted grains. About 20% of the grapes are emptied directly into the concrete tank to undergo a partial carbonic maceration, destemming and crushing the rest. Spontaneous fermentation with wild yeast begins
between 2 and 3 days later and during the first week manual pigeages are carried out. When the alcoholic and malolactic fermentation are completed, the wine is pressed and racked into a 5000L Austrian oak foudre for resting during 17 months.

At Herència Altés we are yesterday's footprint in our gaze towards tomorrow.
We are land, landscape, culture, history and innovation.
The vineyard, cultivated in an ecological way and the wine in its maximum expression, are protectors of our landscape and guardians of our biodiversity. In the winery, we have an environmental project, which protects the flora and fauna indigenous of our environment.
At home, we follow a philosophy of minimal intervention, we respect the wines to maintain the essence of the fruit and thus achieve a perfect harmony between the hand of man and what the earth gives us.
Our aging room is totally underground, to have the perfect temperature and humidity throughout the year in a sustainable way. We work with large oak foudres, of 5000 and 2500 liters, with the philosophy of making long aging, but with the minimum impact of the wood.
Fresh, serene, polished and friendly wines.
