The nerve of the cariñena, the sweetness of the garnacha and the strength of syrah are combined to draw a wine full of ripe black fruit, such as blackberries and plums. Balance and harmony in the mouth, with a good concentration and measured texture. Fruit tannin, ripe and kind. Very juicy.
ELABORATION
Manual harvest of the three varieties with careful selection in the field. They are elaborated separately making a skidding and stepped before the impregnation in auto vaciantes tubs of stainless steel. Maceration-fermentation for 10-15 days at a temperature of 23-26º C. Descend in concrete mills where the MLF is made. "Bâtonnage" of fine lees for about two months to improve the sensations in the mouth. Then we make the mixture, a slight clarification and filtration before bottling.

At home, we follow a philosophy of minimal intervention, we respect the wines to maintain the essence of the fruit and thus achieve a perfect harmony between the hand of man and what the earth gives us.
Our aging room is totally underground, to have the perfect temperature and humidity throughout the year in a sustainable way. We work with large oak foudres, of 5000 and 2500 liters, with the philosophy of making long aging, but with the minimum impact of the wood.
Fresh, serene, polished and friendly wines.
