Orange wine 100% White Garnatxa with 2 years of oxidative aging

Trementinaire refers to the wise women of the mountain, healers, the witches. Aromas of ointments, herbs, plants, dried orange peel. Evoking times of when a solera barrel of wine was kept beneath every staircase, looked after by the grandmother whose job it was to top it up and ensure it never ran dry. Memories of a past time that endure in the present.

ELABORATION

A white wine produced like a red one. Grapes are harvested by hand and collected using 18-kg boxes. Destemmed and crushed, they are placed in a stainless steel tank with their skins to cool the must until the alcoholic fermentation begins with wild yeasts. The must or wine spends a full four weeks in contact with the grape skins to extract colour and aromas before being pressed and transferred into 5 barrels of 500 l. of 5th use and 2 barrels of 300 l. of 8th use to start an oxidative aging for 24 months.

Only 4,000 bottles are produced.

TASTING NOTES

Trementinaire is an orange skin-fermented wine, with a bright orange colour. Aromas of herbs and plants and dried orange peel bring to mind well-matured traditional rancio wines which used to sit in a barrel under the staircase at your grandparents’ home. Memories of a less hurried past are brought back to life. Fresh, intense, dry and elegant in the mouth.

Our aging room is totally underground, to have the perfect temperature and humidity throughout the year in a sustainable way. We work with large oak foudres, of 5000 and 2500 liters, with the philosophy of making long aging, but with the minimum impact of the wood.
