“Inspired by Tradition, I wanted to create an exuberantly aromatic white wine made in the same way as our predecessors Terra Alta. Well, almost the same way. Before modern winemaking practices reached Terra Alta, the whites were made by emptying full bunches into large shallow vats, whereupon a group of locals would proceed to crush the grapes with their (hopefully) clean feet. The resulting mix of pulp, seeds, stems and must would all ferment together resulting in an intensely aromatic, but rustic wine known as brisat”, Rafael De Haan.

ELABORATION

The grapes are destemmed, crushed, chilled to 5º C and deposited into a stainless stank. Pre-fermentation maceration on skins lasts for 10 days and skin contact continues for a further 5 days as fermentation begins. Half way through fermentation, the free run must is racked into a cement tank where fermentation is completed. The wine remains in contact with its lees for 9 months in the cement tank.

Herencia Altés Custom Cuvees

The new winery of Herència Altés, has an area of 4400 m2, largely subterranean, to merge it to the maximum with the surroundings. We also operate, with renewable energy. We have natural thermal insolation and recycle rainwater. All with the idea of respecting the environment to the maximum.

Our breeding room, is totally underground, to have the perfect temperature and humidity throughout the year in a practically all natural way. We work with wood foudres, large, 5000 and 2500 liters, with the philosophy of making long cries, but with the minimum impact of wood. Warm serene, polished and friendly.
